Crispy Roasted Maitake with Garlic & Thyme

Ingredients (2–3 servings)
  • 300–400 g fresh maitake mushrooms

  • 3 tbsp olive oil (or melted butter)

  • 2 cloves garlic, finely sliced

  • 4–5 sprigs fresh thyme

  • Sea salt

  • Freshly ground black pepper

Step-by-Step Instructions
  1. Preheat the oven to 220°C (430°F). High heat is key for crisp edges.

  2. Prepare the maitake by gently tearing the clusters into large bite-sized pieces. Avoid washing; brush off dirt instead.

  3. Season the mushrooms in a bowl with olive oil, garlic, thyme, salt, and pepper. Toss gently to coat.

  4. Arrange on a baking tray in a single layer. Do not overcrowd — this ensures roasting, not steaming.

  5. Roast for 20–25 minutes, flipping once halfway, until deeply golden and crispy at the edges.

  6. Finish & serve immediately. Add a squeeze of lemon if desired.
