What Is Lion’s Mane Mushroom?
Grown right here in Prague, Lion’s Mane (Hericium erinaceus) is a unique mushroom with a shaggy, mane-like appearance. It's celebrated for its cognitive health benefits and meat-like consistency, making it a favorite for plant-based cooking and fine dining alike.

Recipe Spotlight: Lion’s Mane “Chicken” Marsala
This recipe is a perfect introduction to Lion’s Mane. It replicates the deep, savoury flavours of Chicken Marsala—without any meat. Instead, our locally grown Lion’s Mane mushrooms take center stage, proving just how satisfying plant-based cooking can be.
Ingredients:
Lion’s Mane mushrooms (fresh from our Prague farm) – 300–400 g
Shallots or onions – 1, chopped
Garlic – 2 cloves, minced
Flour (or gluten-free alternative) – for dredging
Olive oil + butter (or vegan butter)
Marsala wine – ½ cup
Vegetable or mushroom broth – ½ cup
Cream or plant-based cream – ¼ cup
Fresh parsley or thyme
Salt & pepper
Instructions:
1. Prepare the Mushroom Cutlets
Clean and slice Lion’s Mane into thick slabs.
Lightly season and dredge in flour for a golden crust.
2. Pan-Fry
Heat oil and butter in a skillet.
Sear each piece until golden brown on both sides. Set aside.
3. Build the Sauce
Sauté shallots and garlic until soft.
Deglaze with Marsala wine.
Add broth and simmer gently.
4. Bring It Together
Return the mushrooms to the pan.
Add cream and herbs.
Simmer briefly and serve hot.
This dish pairs beautifully with mashed potatoes, pasta, or crusty bread.
