Ingredients
  • 2 large lion’s mane mushrooms (about 200 g each)

  • 1–2 tbsp olive oil or vegan butter

  • Sea salt and freshly cracked pepper

  • 2 cloves garlic (optional)

  • A few sprigs of fresh thyme (optional)

  • Cast iron skillet or heavy-bottomed pan

  • A press or second pan for flattening

Instructions

1. Prepare the Mushrooms
Gently clean the lion’s mane mushrooms with a dry brush or damp cloth. Trim any tough base. Tear into large, thick slabs to resemble “steaks.”

2. Season
Drizzle both sides with olive oil or melted vegan butter. Sprinkle with sea salt and pepper.

3. Preheat & Sear
Heat your skillet over medium-high until hot. Add the mushroom steaks. Immediately press down using a second heavy pan or a spatula. This helps create a browned, crispy surface.

4. Flip & Repeat
After 3–4 minutes, flip the steaks and press again. You should see deep golden crusting forming on both sides.

5. Add Aromatics (Optional)
In the final minute of cooking, add crushed garlic cloves and fresh thyme for an aromatic butter-baste.

6. Rest & Serve
Let the steaks rest for a minute before serving. Slice and plate as a main dish or sandwich filling.

  • Layer into sandwiches with caramelised onions and mustard.

  • Pair with a red wine reduction for fine-dining presentation.
