Ingredients (4 servings)
250 g maitake mushrooms, chopped
2 medium potatoes, peeled & diced
1 onion, chopped
2 cloves garlic
1 tbsp butter or oil
750 ml vegetable or mushroom stock
100 ml cream (or plant-based alternative)
½ tsp dried marjoram or thyme
Salt, pepper
Step-by-Step Instructions
Sauté onion in butter over medium heat until soft.
Add garlic, cook briefly until fragrant.
Add maitake, cook until they release moisture and begin to brown.
Add potatoes and herbs, stir well.
Pour in stock, bring to a gentle boil.
Simmer for 20 minutes until potatoes are tender.
Blend until smooth using a hand blender.
Stir in cream, season with salt and pepper.
Reheat gently and serve.
Local touch: Garnish with fresh herbs and serve with dark rye bread.
