Ingredients (2 servings)
  • 2 large maitake clusters

  • 2 tbsp neutral oil

  • Salt

Miso butter:

  • 40 g soft butter

  • 1 tbsp white or red miso

  • 1 tsp soy sauce

  • 1 tsp lemon juice

Step-by-Step Instructions
  1. Mix the miso butter ingredients until smooth. Set aside.

  2. Trim the base of each maitake cluster so it sits flat but stays intact.

  3. Heat a heavy pan (cast iron preferred) over medium-high heat with oil.

  4. Season maitake lightly with salt and place cut-side down in the pan.

  5. Press firmly with a spatula or weight to maximize contact.

  6. Sear for 5–7 minutes without moving, until deeply browned.

  7. Flip carefully and cook another 3–4 minutes.

  8. Reduce heat, add miso butter, and baste for 1 minute.

  9. Serve immediately, spooning extra butter over the top.
