Maitake Mushroom Tacos with Smoked Paprika & Lime

Ingredients (4 tacos)
  • 250 g maitake mushrooms, torn

  • 2 tbsp olive oil

  • 1 tsp smoked paprika

  • ½ tsp ground cumin

  • ½ tsp garlic powder

  • Salt

  • Juice of 1 lime

  • 4 corn tortillas

Optional toppings:

  • Pickled red onions

  • Fresh coriander

  • Chipotle mayo or vegan crema

Step-by-Step Instructions
  1. Heat a wide pan over medium-high heat with olive oil.

  2. Add maitake mushrooms and cook undisturbed for 3–4 minutes to brown.

  3. Season with spices and salt, stir and continue cooking until crispy.

  4. Finish with lime juice, toss briefly and remove from heat.

  5. Warm tortillas in a dry pan.

  6. Assemble tacos with maitake and desired toppings.

  7. Serve immediately.
