Simple Sautéed Shiitake Mushrooms with Onion & Garlic

If you’ve ever tasted the deep, earthy flavour of a freshly harvested shiitake mushroom, you know it’s unlike anything you can buy off the supermarket shelf. At our shiitake mushroom farm in Prague, we grow premium-quality shiitakes that are hand-picked at peak freshness and delivered to local kitchens—whether you’re a passionate home cook experimenting with new flavours or a professional chef crafting refined dishes. Shiitakes are incredibly versatile and prized for their rich umami taste, and one of the simplest ways to enjoy them is by sautéing with onion and garlic until tender and caramelised. This quick, farm-to-table recipe highlights the natural flavour of fresh shiitake mushrooms and makes the perfect side dish, pasta topper, or garnish for your favorite Czech-inspired creations.
Ingredients (Serves 4)
1 lb (≈450 g) fresh shiitake mushrooms, cleaned and sliced (discard or save stems for broth).
1 small onion, finely diced.
2 cloves garlic, finely minced or sliced.
2 tablespoons oil (olive oil or neutral cooking oil); optional: 1 tbsp butter for flavor.
Salt & freshly ground black pepper, to taste.
Optional garnish: chopped green onions, fresh parsley, or thyme.
Instructions
Prep Mushrooms
Gently wipe shiitakes clean with a damp cloth—avoid soaking, which can lead to sogginess. Trim and slice the caps; set aside stems for broth if desired.
Heat the Pan
Warm the oil (and butter, if using) in a large skillet over medium to medium-high heat.
Sauté Mushrooms
Add the sliced shiitakes in a single layer and let them cook undisturbed for about 3–5 minutes until nicely golden-brown—this encourages caramelisation.
Stir gently and continue cooking for another 2–3 minutes until most pieces are evenly browned and shrink slightly.
Add Onion & Garlic
Stir in the onion and continue to sauté until it becomes translucent or slightly browned (about 3–5 minutes).
Add garlic toward the last minute to prevent burning and imparts fragrant flavor without bitterness.
Season & Finish
Season lightly with salt and pepper. Optional: finish with a splash of white wine for depth or squeeze of fresh lemon to brighten flavours.
Remove from heat; garnish with chopped green onion, parsley, or thyme as desired
Tips for Success
Don’t crowd the pan: Overcrowded mushrooms will steam, prevent caramelisation. Cook in batches if needed.
Let it cook undisturbed: Time spent untouched is essential for browning and flavor development.
Timing onion and garlic: Onions go in first; garlic goes in at the end to avoid burning
Use fresh herbs: Bright fresh herbs at the end add freshness and contrast to the richness of caramelised mushrooms
