300–400 g fresh maitake mushrooms

2 cloves garlic, finely sliced

4–5 sprigs fresh thyme

Step-by-Step Instructions

Preheat the oven to 220°C (430°F). High heat is key for crisp edges.

Prepare the maitake by gently tearing the clusters into large bite-sized pieces. Avoid washing; brush off dirt instead.

Season the mushrooms in a bowl with olive oil, garlic, thyme, salt, and pepper. Toss gently to coat.

Arrange on a baking tray in a single layer. Do not overcrowd — this ensures roasting, not steaming.

Roast for 20–25 minutes, flipping once halfway, until deeply golden and crispy at the edges.

Finish & serve immediately. Add a squeeze of lemon if desired.
