We’re growing Lion’s Mane mushrooms right here in Prague. In this recipe, we don’t use store-bought extract — we make it from fresh mushrooms, preserving the farm-to-table integrity.

How We Prepare Our Lion’s Mane Powder
  1. Harvest fresh Lion’s Mane from the grow chamber. Brush off any substrate gently.

  2. Slice or tear into thin pieces — this helps them dry faster.

  3. Dry the mushrooms

    • Option A: In a dehydrator at 40–45 °C (104–113 °F) for 8–12 hours.

    • Option B: In the oven at the lowest setting with door slightly ajar — check to avoid burning.

  4. Ensure they’re completely dry (they should snap, not bend).

  5. Grind the dried mushrooms using a spice grinder, coffee grinder or food processor.

  6. Sieve the powder to keep only fine, smooth particles.

  7. Store in an airtight jar, preferably in a cool, dark spot.

Ingredients
  • 1 cup berry juice (e.g., blueberry, raspberry, or mixed berry)

  • 2–3 tablespoons maple syrup or honey (adjust to taste)

  • ½ cup cold water (for blooming gelatin or agar-agar)

  • 2 tablespoons gelatin or agar-agar (vegan option)

  • 1–2 teaspoons Lion’s Mane mushroom powder (made from fresh mushrooms: slice, dry, then grind)

  • Juice of ½ lemon (optional)

    Instructions
    • Bloom gelling agent

      • Mix the cold water and gelatin/agar in a small bowl. Let it sit for 5 minutes.

    • Warm berry mixture

      • In a saucepan over low heat, add the berry juice and maple syrup. Stir until integrated (don’t boil).

    • Add Lion’s Mane powder

      • Whisk in 1–2 tsp of your freshly made mushroom powder. Stir until fully dissolved.

    • Combine with gelling agent

      • Slowly whisk in the bloomed gelatin or agar. Stir continuously over low heat until smooth.

    • Add lemon juice (optional)

      • Just a quick splash to brighten the flavour.

    • Pour into molds

      • Use a dropper or small jug to fill silicone gummy molds.

    • Set & chill

      • Let cool at room temp, then refrigerate for 30–60 min or until firm.

    • Unmold & store

      • Pop them out gently and keep in an airtight container in the fridge for up to 5 days.
